In our home in Paju, we still make our own Kimchi, which admittedly has a deeper flavor than the store-bought versions.<\/p>\n\n\n\n<p>However, most Koreans today\u2014myself included at times\u2014actually buy Kimchi from the market. <strong>Don&#8217;t worry!<\/strong> If you buy a jar from the store and let it ferment at room temperature for 1-2 days as I suggested, you can achieve a fantastic, authentic taste that is very close to homemade.
